My interest in people means that, from time to time, I encounter people, who, for whatever reason, interest me or catch my eye. I engage in a conversation with them and ask if it's OK to photograph them.
The encounter may not last long but the story they tell through their eyes, facial expressions and body language is always interesting to me.
